Bacon Wrapped Pupu

Recipes for a variety of bacon wrapped items that can be served as appetizers or snacks. Includes bacon wrapped shrimp, water chestnuts, olives, pickles, cheese, and tamales.

Bacon Wrapped Shrimp
Cook 1 pound medium-large shrimp in boiling, salted water for about 5 minutes. Drain, shell, and de-vein. Broil 1/2 pound thinly sliced bacon on one side only, and drain. Cut each slice in half crosswise. Mince 1 clove of garlic and mix it with 1/2 cup of chile sauce. Dip each shrimp into the sauce, wrap in bacon, and fasten with a toothpick. Appetizers can be refrigerated at this point. Arrange the shrimp one inch apart on a broiler rack and broil on both sides until bacon is crisp on both sides.

Bacon Wrapped Water Chestnuts
Drain a 5 ounce can of water chestnuts. Mix 1/4 cup of soy sauce with 12/4 cup of sugar. Cut four slices of bacon in half lengthwise and crosswise. Marinate water chestnuts in soy sauce and sugar mixture for 30 minutes. Roll water chestnuts in sugar, wrap with bacon, fasten with a wooden toothpick, and bake in a 400 degree oven for about 20 minutes. drain on paper towels. If they cool, they can be reheated in a 350 degree oven for about 5 minutes.

Bacon Wrapped Olives, Pickles, or Cheese
Cut bacon into halves lengthwise, and then into halves or thirds crosswise, depending on the size of the item you will wrap. Wrap each piece of bacon around a stuffed green olive, an olive stuffed with finely minced onion, a small piece of sweet pickle, or a cube of cheese spread with mustard. Fasten with a wooden toothpick. Arrange on a rack above a baking sheet, or directly on the baking sheet if you don't have a rack. Bake in a 450 degree oven until the bacon is crisp.

Bacon Wrapped Tamales
Cut canned tamales into 1 or 1.5 inch pieces. Wrap each piece in a strip of bacon and fasten with a wooden toothpick. Bake at 500 degrees until bacon is crisp.
